Pumpkin Scones Recipe
A simple recipe for pumpkin scones that are the perfect addition to a fall meal. Great with soups, stews and chowders.
- 2 tablespoons margarine or butter
- 1/2 cup sugar
- 1 cup canned pumpkin
- 1 egg
- pinch of salt
- 2 heaping cups of flour
- 2 teaspoons baking powder
Cream together margarine and sugar. Then add egg, then pumpkin. Beat well. Add remaining ingredients. Mix by hand.
Put dough on floured surface and push down with hands (don't roll out with a rolling pin, you want them to be sort of thick and chunky looking).
Cut out circles with biscuit cutter or a drinking glass (keep bringing dough back together and push out with hands each time all the scones are cut out, when there is enough for one left shape into a circle for the last scone).
Bake in preheated oven at 350 degrees for 15 to 20 minutes.
