Pumpkin Scones Recipe

A simple recipe for pumpkin scones that are the perfect addition to a fall meal. Great with soups, stews and chowders.

Ingredients

  • 2 tablespoons margarine or butter
  • 1/2 cup sugar
  • 1 cup canned pumpkin
  • 1 egg
  • pinch of salt
  • 2 heaping cups of flour
  • 2 teaspoons baking powder

Instructions

  • Cream together margarine and sugar. Then add egg, then pumpkin. Beat well. Add remaining ingredients. Mix by hand.
  • Put dough on floured surface and push down with hands (don't roll out with a rolling pin, you want them to be sort of thick and chunky looking).
  • Cut out circles with biscuit cutter or a drinking glass (keep bringing dough back together and push out with hands each time all the scones are cut out, when there is enough for one left shape into a circle for the last scone).
  • Bake in preheated oven at 350 degrees for 15 to 20 minutes.
