Easy Leprechaun Bars Recipe for St. Patrick’s Day
Easy St. Patrick’s Day dessert: Leprechaun bars recipe that’s fun, festive, & simple to make — the perfect sweet treat for your celebration with 6 ingredients!
One of my house’s favorite treats is rice crispy treats. I had these gorgeous mint chocolate chips begging to be used. I mixed up the regular rice crispy treat recipe and came up with this mint chocolate leprechaun bars.

Ingredients
You will need:
- 3 cups of mini marshmallows
- 1 tablespoon of butter
- 2 teaspoons of vanilla extract
- 3 cups of Cocoa Puffs cereal
- 1 cup of mint chocolate chips (plus a few for embellishing)
- green conversation hearts
How to Make Leprechaun Bars:
Start by putting marshmallows, butter and vanilla in a microwave safe bowl. Microwave for 1 minute. Mix and melt in microwave for 1 more minute. Grease a 8 x 8 pan.
Immediately add Cocoa Puffs to melted marshmallows and mix until combined. Then add mint chips. Mix until combine.
Press into 8 x 8 pan using wax paper. Let cool and then cut.
Shamrock on top!!! Use three conversation hearts and two mint chips to create a shamrock design on each leprechaun bar. Serve and enjoy!
