This recipe is super simple and comes together fast. You can use a crepe maker or a regular frying pan.

Step-by-step directions:

  1. Add liquids first
    In a blender, pour in 1 ½ cups milk, 2 tablespoons oil, and 3 eggs. Or you can mix in a bowl with an electric hand mixer.
  2. Add the dry ingredients
    Add 1 ½ cups flour, ⅛ teaspoon salt, ⅓ cup parmesan, and 1 teaspoon oregano.
  3. Blend until smooth
    Cover and blend the mixture. Scrape down the sides to make sure everything is well combined.
  4. Pour batter into a shallow dish
    Use a pie plate or something similar for dipping your crepe maker or spooning into a pan.
  5. Cook your crepes
    • If using an electric crepe maker: Spray it with cooking spray, dip it quickly into the batter, and let it cook until the edges lift.
    • If using a frying pan: Heat a small nonstick pan on high. Add a little batter and swirl it around to coat the pan. Cook until edges lift and flip if needed.

Notes

Oregano can be substituted for thyme or other herbs you like.
 
Crepes can also be made in a frying pan on the stovetop in a hot pan on high heat. Add a small amount of batter to the bottom of the pan and swirl around to coat pan. Cook until edges pull away from the sides of the pan.
 
I think it is easier to use the electric crepe maker, but either method will work with this recipe.
