Leprechaun Bars

One of my house’s favorite treats is rice crispy treats. I had these gorgeous mint chocolate chips begging to be used. I mixed up the regular rice crispy treat recipe and came up with this mint chocolate leprechaun bars. Leprechaun Bars at www.thebensonstreet.com 4 You will need:

  • 3 cups of mini marshmallows
  • 1 tablespoon of butter
  • 2 teaspoons of vanilla extract
  • 3 cups of Cocoa Puffs cereal
  • 1 cup of mint chocolate chips (plus a few for embellishing)
  • green conversation hearts

Start by putting marshmallows, butter and vanilla in a microwave safe bowl. Microwave for 1 minute. Mix and melt in microwave for 1 more minute. Grease a 8 x 8 pan.

Immediately add Cocoa Puffs to melted marshmallows and mix until combined. Then add mint chips. Mix until combine.

Shamrock on top!!! Use three conversation hearts and two mint chips to create a shamrock design on each leprechaun bar. Serve and enjoy!
