Biscuits & Gravy Casserole

A simple and delicious recipe to serve for breakfast or brunch.

Ingredients

  • 1 10 oz can refrigerated biscuits
  • 1 lb pork sausage
  • 2 c shredded cheese colby jack, cheddar, etc. - DIVIDED
  • 6 eggs
  • ½ c milk
  • 1 t salt
  • ½ t pepper
  • 2 c water
  • 1 package sausage gravy mix

Instructions

  • Preheat the oven to 350 degrees. Grease a 13x9 baking dish with non-stick spray. Set aside.
  • Open the biscuits and press into a single layer in the bottom of the baking dish.
  • In a large frying pan, brown the sausage until it is no longer pink. Drain off the excess grease.
  • Sprinkle the browned sausage over the biscuits.
  • In a medium bowl, combine the eggs, milk, salt and pepper. Whisk to combine. Pour the egg mixture over the sausage and biscuits.
  • Sprinkle approximately half of the shredded cheese over the eggs.
  • In a small saucepan, combine the gravy mix and water. Heat over medium/high heat until boiling. Whisk constantly as it will thicken very quickly. Don’t let it scorch. Remove from the heat once thickened.
  • Pour the gravy over the eggs and spread to the edges.
  • Sprinkle the remaining shredded cheese over the dish evenly.
  • Bake in the preheated oven for approximately 30-40 minutes or until the dish is bubbly and the cheese is melted and slightly browned.
  • Allow to cool for about 5-10 minutes before serving.

Notes

Storage: Casserole can be stored in an airtight container in the fridge for up to 2 days.
