1/3cupVegetable Oil
1/2cupPowdered Sugar
Instructions
Preheat the oven to 375 degrees. Line two cookie sheets with parchment paper and set aside.
In a medium-sized mixing bowl, combine the strawberry cake mix and eggs. Mix together until well combined.
Add the vegetable oil to the mixture and continue to combine until a cookie dough forms.
Using a 2 tablespoon cookie scoop, form dough balls and place them on the prepared baking sheet. You should be able to form around 18 dough balls.
Roll balls of dough in powdered sugar until completely coated. Place the coated dough balls back onto the parchment paper.
Bake in the preheated oven for 15-17 minutes, or until the cookies are puffy, dry, and the powdered sugar has cracked giving the beautiful crinkle effect.

Notes
To Make Vegan: Cookies can be made with two flax eggs (In a small bowl add 2 tablespoons ground flax seed and 6 tablespoons water, set aside for 10 minutes to make flax eggs).
Additional oil may be needed according to box directions. Some strawberry cake mixes call for 1⁄3-1⁄2 C of oil. Follow directions on the box for these cookies too.
