  2. Cream 1 cup of shortening, 2 cups of sugar, and 2 egg yolks in a large mixing bowl using a stand mixer or hand mixer on medium-high speed.
  3. In a separate bowl, whisk together 4½ cups flour, 1 cup cocoa powder, 2 tsp baking soda, 1 tsp baking powder, and ½ tsp salt.
  4. In another bowl or large measuring cup, combine the buttermilk (or sour milk) and 1 cup hot water.
  5. Slowly add the dry and wet ingredients to the creamed mixture, alternating between the two, and mix until batter is smooth.
  6. Drop dough by teaspoon (or use a cookie scoop) onto prepared baking sheets. Try to keep the cookies similar in size.
  7. Bake in oven preheated to 350°F for 10–15 minutes until the tops are set. Let cool completely on wire racks.

Make the Frosting:

  • 1 cup hot water
  • Icing Ingredients
  • 2 egg whites
  • 4 tablespoons milk
  • 4 tablespoons flour
  • 2 tablespoons powdered sugar
  • 1 cup shortening
  • pinch of salt
  • 1/2 teaspoon vanilla
  • 4 cups powdered sugar

Instructions

  • Cream the first three ingredients together in a stand mixer or large bowl.
  • In a separate bowl mix the next 5 ingredients.
  • In another bowl mix milk and water.
  • Add dry and liquid ingredients alternately to the first large bowl mixing to combine.
  • Drop by teaspoon onto lightly greased baking sheet.
  • Bake at 350 Degrees for 10 to 15 minutes.
  • Cool completely.
  • In another bowl beat all the icing ingredients together in a bowl except for the 4 cups of powdered sugar until fluffy.
  • Add the remaining powdered sugar until creamy.
  • Frost one cookie and then top with another cookie.

Notes

I would double the icing to be sure you have plenty for your cookies. These can be frozen.
