Salted Nut Roll Cookies

Peanuts, Rice Crispies, Peanut Butter, Marshmallows, mixed all together create scrumptious Salted Nut Roll Cookies. These take a favorite candy of mine and turn it into a delightful cookie!

Not only are these sooo yummy, they are easy easy! This is a great snack or desert to take to summer picnics. Salted Nut Roll Cookies only take about 20 minutes to whip up.

Five ingredients make this a simple recipe, which I love. I need easy things to fit my busy schedule. Aren’t those the best recipes anyway? The ones that taste like you spent hours on them but only really took 20 minutes. Totally makes me look good when I bring out my easy recipes to parties.

Salted Nut Roll Cookies

An easy rice crispy type cookie.

Ingredients

  • 1 cup corn syrup divided
  • 1 cup peanut butter divided
  • 1 cup brown sugar divided
  • 1 1/2 to 2 cups of peanuts
  • 1 bag mini marshmallows
  • 4 cups of rice crispy cereal

Instructions

  • Mix 1/2 cup corn syrup and 1/2 cup brown sugar in a saucepan and bring to a boil.
  • Remove from heat and add 1/2 cup peanut butter, mix.
  • Add 2 cups of rice crispies and 1 cup of peanuts, mix.
  • Press into a greased 9 x 13 pan.
  • Cover with mini marshmallows.
  • Put under broiler just until marshmallows begin to puff, remove from oven.
  • Mix 1/2 cup corn syrup and 1/2 cup brown sugar in a saucepan and bring to a boil.
  • Remove from heat and add 1/2 cup peanut butter, mix.
  • Add 2 cups of rice crispies and 1 cup of peanuts, mix.
  • Press mixture over marshmallows in pan.
  • Let cool.
  • Cut and serve.

Notes

Use peanuts to your liking.
Drizzle with chocolate for an extra special treat.

  1. Having been born and brought up in South Africa and Portugal, I’ve never had the pleasure of being ale to taste a salted nut roll. Having said that, they look DIVINE ! Salty nuts, syrupy caramel sauce and marshmallows ….! O__O Yum!
