Easy Homemade Waffles

A simple, but delicious homemade waffle recipe.

Ingredients

  • 2 eggs separated
  • 1 cup milk
  • 1 cup flour
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup vegetable oil
  • toppings

Instructions

  • Preheat waffle iron to desired settings.
  • Whip egg whites until soft peaks form.
  • In a separate bowl mix together remaining ingredients until just blended.
  • Fold in egg whites and mix together well with a fork.
  • Spray waffle iron (if not a nonstick surface).
  • Pour in batter about 1/2 to 3/4 cup depending on waffle iron.
  • Cook until done.
  • Top with syrup, fruits, etc. and serve warm.

Notes

Double this recipe if you are making waffles for a crowd or if you want to freeze some for later.
Waffles freeze well. Flash freeze on a cookie sheet and then store in an airtight container or ziplock bag. I like to toast them in the toaster to give them a little crispness on the outside. But microwave or oven can also be used to reheat frozen waffles.
