Spinach and Ham Egg Casserole

Are you trying to get your crap together in this new year? I think we can do it any time of year, but I am trying to be a little more organized in general. I want to help you with that too. This spinach and ham egg casserole is perfect for that. Get a dose of protein first thing in the morning with this yummy egg casserole.

Eggs, spinach, and ham are the stars of this dish. And so easy!! Mix everything together in a bowl, pour into a pan and bake. Mix it up and then go shower and get ready. About a half and hour later, this baby is done. And if you have leftovers that is great. Just do a quick reheat and eat it over the next few days.

That is what makes this a great meal planning recipe. Make one pan at the first of the week, then enjoy it each day with a side of fruit. I also love that this recipe gets some veggies in a breakfast. Oh and you can throw in whatever extra you like, like peppers, bacon, sausage, etc. Same with the cheese. I like to use pepper jack because it give it a little spice, but cheddar or monterey jack would taste great too!

Ingredients

  • 10 Eggs beaten
  • 1 cup fresh baby spinach
  • 1 cup diced ham
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 pint cottage cheese
  • 4 cups shredded cheese
  • 1/2 cup melted butter

Instructions

  • Mix all ingredients together, until combine.
  • Pour into a greased 9x13 pan.
  • Bake at 350°F for 35 minutes.
  • Cut and serve warm.
