For my first anniversary, the Mr. and I decided to go to Las Vegas. I had only been through Vegas a couple of times. As we were driving he kept telling me, “Don’t talk to anyone and don’t take anything that anyone hands you.” We arrived and checked into our hotel and walked out onto the strip. We had probably walked 50 feet from the hotel and some lady asked me if I would like free appetizer. Since I love a deal, I jumped at the offer. She gave us some coupons and wasn’t handing out all the other crap that gets handed out on the strip. But as I said yes to her, the Mr. gave me a look, like didn’t tell you not to talk to anyone!!! We headed to the restaurant and got our free appetizer which was a order of crunchy chicken strips. They were so yummy and I’ve been trying to create them in a healthy way since. Enter Honey Bunches of Oats Cereal!!! The inspiration hit the other day as I was at Wal-Mart pursuing the cereal aisle. Honey Bunches of Oats Honey Roasted and with Almonds have always been one of my favorite cereals and there was a newHoney Bunches of Oats Gluten Free Chocolate that I had to try. Oh and I saw some adorable Kung Fu Panda Cereal and Crunch O’s that would be perfect for the kids. That way everyone has something they love for breakfast.

Standing in the cereal aisle, the wheels started turning in my head reminding me of those crispy chicken strips. Why not use Honey Bunches of Oats as a coating for chicken nuggets, genius!! Perfect solution for lunch and dinner that are way better than the drive-thru.

Honey Bunches of Oats Baked Crispy Chicken Nuggets

Ingredients

  • 1/2 cup crushed Honey Bunches of Oats Honey Roasted Cereal
  • 1 tablespoon grated parmesan cheese
  • 1 egg white
  • 1 pound boneless skinless chicken breasts or tenders, cut into 1 inch pieces

Directions

1. Crush cereal and mix with cheese in a large plastic sealable bag (quart or gallon sized).

2. Dip each chicken piece in the egg white and place in the bag, seal and shake to coat.

3. Place on a greased or lined baking sheet.

4. Bake at 400 Degrees for 6 minutes and turn nuggets.

5. Bake an additional 6 to 7 minutes until no longer pink.

Serve with your favorite dipping sauce (I used a Honey Mustard Sauce and it was AMAZING).

  1. We are huge fans of the Honey Bunches of Oats Honey Roasted cereal and have a stock of it in our pantry. I never thought to use it for a chicken nugget coating! My kids (ok, me too!) would love it! YUM! #client
