I love a quick and easy dinner. I used to not cook much, but then I got married. I knew I had to be a good cook to feed me and my husband. So I started looking for easy meals. I search for “easy meals” on Pinterest every couple of days. I remembered one of my mom’s quick recipes for Chicken and Rice Soup and I decided to spice it up a little bit. It is perfect on a cool night when you need dinner fast.

This simple chicken and rice soup combines some veggies, rice and soup. It really does come together nice and quick in 30 minutes.

Serve it with bread, rolls, biscuits or even crackers. Even the kids will love this soup.

Chicken and Rice Soup

Ingredients:

  • 4 cans cream of chicken soup
  • 2 soup cans full of milk
  • 2 cups uncooked rice
  • 1 bag California style frozen vegetables
  • 1 teaspoon garlic powder
  • salt and pepper

Directions:

Cook rice in rice cooker or use minute rice.

While rice is cooking, heat vegetables in the microwave.

Mix soup and milk in a pot. Heat on Medium.

When vegetables are cooked, remove from microwave and chop into small pieces.

Mix vegetables and rice (when done cooking) into soup mixture. 

Add garlic powder and salt and pepper to taste. 

Heat until warm.

Garnish with shredded cheddar cheese and serve with rolls, bread or crackers.

Feeds 4 to 6.

  2. thanks for the recipe! I like how slow cooker recipes are very easy to customize to individual preferences – like you mentioned you can choose your favorite enchilada sauce or choose to mince garlic instead of doing the powder.

    My mother and I had a better than average relationship growing up so we were somewhat close. Kiddo and I get along truly well and she converses with me about a considerable measure of things she doesn’t converse with her father (my center points) or her mother since she doesn’t see me the same as them. Her mother has disillusioned her thus there is no trust there. Thus, I am protected. I trust she will keep on feeling safe with me and trust in me since we have an awesome confiding in bond.
